Garlic Roasted Sweet Potato Rounds

Directions

1Preheat oven to 425 degrees.

2Peel sweet potatoes and slice into ½ inch thick rounds.

3Place sweet potato rounds in large bowl. Drizzle 1 T of OIL WELL Garlic Olive Oil over top and sprinkle with OIL WELL Himalayan Pink Salt and fresh ground pepper. Toss to coat well.

4Arrange rounds in single layer on baking sheet.

5Bake until golden and tender. Flip half way through baking. (About 25-30 minutes)

6While rounds are baking, in small bowl combine cilantro, chives and the remaining 2 T of OIL WELL Garlic Olive Oil. Stir well to combine. Drizzle over hot sweet potato rounds. Serve and enjoy!

2 large sweet potatoes

3 T OIL WELL Garlic Olive Oil

2 T fresh cilantro, roughly chopped

2 T fresh chives, roughly chopped

OIL WELL Himalayan Pink Salt and fresh ground pepper to taste
